THE BACKSTORY

About Mr. Jack

Mr. Jack was born out of yearning for our Peruvian flavors, years of tradition, wide biodiversity and multicultural influence are the reasons why our food is so flavorful. And we want to make sure that everybody that sets foot into our restaurant has a chance to experience Peru just like we have had all our lives.

Our restaurant’s name originates from my grandfather’s name who is also Jack. My grandfather was a landlord in the outskirts of Lima City. He was a devoted customer of the first Peruvian Rotisserie Chicken “La Granja Azul,” which was the first Pollo a la Brasa restaurant. After a year of being a repeat customer of the above-mentioned restaurant, he started to experiment with the flavors, and he developed his own recipe which now we bring to you. We are starting this restaurant as a single unit in Eldersburg, MD and our plan is to grow in the United States to show our Peruvian Gastronomic Culture to the world.

We are passionate about the Peruvian flavors that are brought to each dish, and we are certain you will taste the difference and all of our delicious meals.

We believe sustainability grasps short and long-term profitability by managing economic, social and environmental factors; being responsible and taking care of the planet. For that, we follow the established rules of FLOSS (Fresh, Local, Organic, Seasonal, and Sustainable). We try to control the products that we are supplied. We recycle our food and donate it, engaging our employees to participate and be part of this mission.
